If you’re like me, “special treat” preparation can often create horrible conflicts of temptation vs. willpower for days… gazing at the leftover delectable morsels every time you pass the kitchen… thinking, “How bad could it be if I had just ONE more….”
That’s why I love treats like this one. It’s not a batch of brownies, a collection of cookies, or a plate of pie. It’s a one-serving, quick-fix, that still isn’t all that bad for you… as special treats go.
I’ve seen some great recipes for coffee mug brownies, and unfortunately for me, most of them contain coconut flour, which I don’t tolerate well. But THIS… this recipe rocks. I hope you like it too.
Coffee Mug Banana Raisin Blondie
Ingredients:
2 tablespoons butter (coconut oil would probably work too)
4 tablespoons almond flour
1 tablespoon almond butter
1/2 very ripe banana
1 egg
pinch of salt
pinch of baking powder
dash of cinnamon
splash of vanilla extract
small handful of raisins
Directions:
Melt butter in a large coffee mug. Add banana, and mash together. Stir in remaining ingredients until combined well. Microwave on high for 2 minutes.
The “blondie” should turn out easily onto a plate.
If you’re looking for some variety, add some chopped walnuts, or even a few dark chocolate chips!
