I’ve been really disciplined about my carbs this week, so tonight was a well deserved treat. And as the title says, this recipe is extremely easy – free of grains and refined sugars but bursting with flavor.
No-Bake Strawberry Apple Pie
2 1/2 cups almonds
2 tablespoons butter, melted
pinch of salt
4 gala apples, cored and thinly sliced
2 cups sliced fresh strawberries
3 tablespoons butter
1 tablespoon vanilla extract
In a large saucepan, melt 3 tablespoons of butter over medium-high heat. Add sliced apples, cooking for about 3 minutes or until apples are slightly softened. Add strawberries and cook for about 5 minutes, adding vanilla for the last minute, stirring until flavors are combined and fruit is softened. Turn off heat to allow pie filling to cool slightly.
Meanwhile, in a food processor, combine all crust ingredients and process for 60 seconds or until mixture begins to clump together. Press into a 9-in pie dish. Pour filling into crust. Allow to cool at room temperature for 30 minutes, and then in the refrigerator for an additional 30 minutes, before serving…
