I had some eggs and a zucchini looking very hopeful that it would be their moment to SHINE, so this recipe was created.
Savory Zucchini Pancakes
1 large zucchini, shredded in a food processor
1/2 cup blanched almond flour
salt and pepper to taste
Combine all ingredients in a mixing bowl. Over an electric griddle on medium-high heat, form and slightly flatten 6-8 small pancakes. Cook for about 4 minutes on each side. Enjoy!
