I love how easy it is to eat veggies in the morning – whether I toss shredded carrots or zucchini into pancakes, sautee onions and kale and add them to omelets or quiche, or throw together a simple “home fry” recipe like this one, my kids end up getting a vegetable component to their meal and I get the peace of mind knowing they are eating delicious food that is good for them!
Turnip Home Fries
2 turnips, peeled and cut into small squares
3 tablespoons butter
salt and pepper to taste
Preheat oven to 400 degrees. Melt butter and toss with turnip squares until evenly coated. (I like the convenience of doing this in a ziptop bag.) Spread onto a baking sheet and sprinkle with salt and pepper. Bake on top rack for 25-30 minutes, turning once. When turnips are done, they should be slightly browned.
Serve as a side with your favorite breakfast foods. We had ours this morning with bacon and scrambled eggs with green chiles!
