Today was a five-gig day. And no, I’m not talking about “gig” in computer terms. I’m talking my participation in five musical events today. Most pro musicians have a love-hate relationship with the month of December, and I am no exception. My final two concerts were at 4 and 7 at a church an hour away, and we were told that the orchestra would “get fed” between concerts. It’s a wonderful gesture, but I’m not so much into deli sandwiches these days. Problem two: It’s the end of the week and I’m fresh out of leftovers and running low on groceries. But I had everything necessary to make THESE awesome muffins. It was just enough to get me through my concerts without my stomach grumbling, creating an “organ recital” that nobody wanted to hear.
I started with one of my all-time favorite recipes from Paleo Parents. These guys are fabulous and I can hardly wait for their “Eat Like a Dinosaur” book to hit the stands. Their recipe for Chunky Monkey Muffins is (in my mother’s words) “totally the bomb!” I especially like that I can make it with my kids in the kitchen, and it’s a wonderful bribe… er… INCENTIVE to get them to be good. “If you’re a good boy and go to bed for the babysitter tonight, we can make Chunky Monkey Muffins tomorrow!” Trust me, it works.
I started with their recipe, and changed it up a bit – NOT because there is anything wrong with their recipe. Their recipe totally rocks. But for the purposes of what I needed tonight, I wanted a little less chocolate and a little more protein.
If you’re looking for a delectible treat, make their muffins as is. If you want to try my variation, be my guest.
Start with their recipe, completing steps 1-3 with “cocoa powder” option on their “choose your own adventure” part, and adding 4 eggs to the mix. Instead of using “toppings”, mix in (by hand) 1/2 cup dried cranberries and 1/2 cup shredded coconut. Bake at 350 degrees for 30 minutes or until a toothpick inserted comes out clean. Enjoy!
