Sweet Potato Chocolate Pudding

This dessert is about as guilt-free as you can get while still packed with both nutrients and FLAVOR!  I must emphasize the extreme importance of buying quality ingredients, however.  I recently made the mistake of purchasing conventional sweet potatoes from the local discount superstore.  Their color was anemic and their flavor was like cardboard.  Please, don’t skimp on sweet potatoes!  Buy organic for vibrant color and flavor!

Sweet Potato Chocolate Pudding

Ingredients:

2 medium/large sweet potatoes (organic)

1/3 cup almond milk (plain, unsweetened)

3 tablespoons coconut oil

1 teaspoon cinnamon

2 tablespoons cocoa powder

1 tablespoon vanilla extract

Chopped walnuts (optional)

Directions:

Bake sweet potatoes in your preferred method.  (I was lazy and used the microwave.) Cut in half and scoop the insides into a blender.  Add remaining ingredients.  Blend together.  Spoon onto individual serving plates and garnish with chopped walnuts, if desired.

You can eat this warm and it tastes really good.  If you can wait until it chills in the fridge for a little while, it tastes awesome.  It all depends on your patience and willpower.  🙂

    • This was my first experiment with the combination as well, but I was very pleased with both the taste and the ease of the recipe! Be sure to use really good sweet potatoes, as the recipe hinges entirely on how good they taste. Let me know what you think!

  3. Um…Wow! My girlfriend had neck surgery yesterday. She came home this morning and her throat was fairly tender from being rummaged around in to clear the vertebrae they were working on. I found your Soothing Butternut Soup and made it for lunch (a total win – she finished more than I thought she would for it being her first real meal AND it settled her stomach from the medications and anesthesia). I poked around your site this afternoon and realized I had almost everything on hand for this pudding…and chocolate pudding was the first thing she asked for after she woke up. I got to put REAL FOOD in her *and* give her the chocolate pudding she wanted! My 19 year old son also ate it with a good bit of glee. And I am simply amazed at how wonderful this is – great flavor, wonderful rich texture, and it tastes almost sinful. Thank you for sharing!
