Mini Meat Cakes

My 3 year old was begging me for purple cauliflower.  Actually, he wanted purple cauliflower AND white cauliflower AND green cauliflower.  And he was so insistent, even the sweet grandmotherly lady standing near us at the grocery store had to pause and say, “Boy!  He really likes cauliflower!”

No recipe today – it’s been a long day and I’m exhausted.  I’ll simply say this – use your favorite meat loaf recipe and your favorite mashed cauliflower recipe, and you can create this home-run.  I was totally “winging it” with the meat loaf tonight.  I can tell you I used about 1 1/3 pounds ground beef, 1/3 cup almond flour, 2 eggs, marjoram, cumin, garlic, salt, pepper, and some sauteed green peppers, onions, and spinach.  The “icing” was purple cauliflower steamed, then pureed with some salt and a little of the cooking liquid (which was quite purple).  I put it in a plastic bag, snipped a corner, and decorated my cakes “bakery style”.

My boys LOVED it.  Went back for seconds, and probably would have had thirds, except that I wanted to save some for my husband when he got home from work.  This proved to be a mistake, as he scraped off the “icing” (never been a fan of mashed cauliflower) took two bites of the meat cakes, pushed the plate to the side and walked away.  Oh well.  Guess you can’t please everybody.
