EASY 4-Ingredient Baked Mustard Chicken

Ingredients:

  • Coconut oil
  • Chicken breasts
  • Spicy brown mustard
  • Almond meal/flour

Directions:

Melt a little coconut oil in the bottom of a glass baking dish.  Lay chicken breasts in the dish.  Brush top of chicken breasts with a little spicy brown mustard.  Sprinkle with a light dusting of almond meal/flour.  Bake at 375 degrees for 40 minutes or until chicken is done. Continue reading

Chicken Avocado Salad with Cilantro and Lime

I tried to find a creative title for this recipe.  I even asked my husband (the “king of puns”) for help. Chicken Apple Almond Omelet

The other day I was trying to use up some leftover chicken, attempting a breakfast reinvention.  My 3 year old entered the kitchen, asking what was I was making.  I told him, “I’m gonna make an omelet with this chicken… What else should I put in here?”  Without hesitation, he responded, “Apples and almonds!”  I love it when he gives me recipe ideas.
