No-Bake Chocolate Nut Clusters


This recipe could not be easier.  All you need is coconut oil, chocolate chips, and the nuts of your choice.  Heat 1-2 cups dark chocolate chips and 1 tablespoon coconut oil in a microwave safe bowl at 30 second intervals, stirring between, until melted.  Mix in 3-4 cups of nuts of your choice.  (I used blanched, sliced almonds and chopped walnuts.)  Spoon small mounds of the mixture onto parchment paper or wax paper, allow to cool/set, and enjoy!

Variations: add shredded coconut, a sprinkle of sea salt, a dash of vanilla extract or cinnamon… get creative!

ETA: One of my students mentioned adding raisins or coffee beans.  I’ll have to try this next time!

Italian Meat and Veggie Loaf

Chicken Avocado Salad with Cilantro and Lime


I tried to find a creative title for this recipe.  I even asked my husband (the “king of puns”) for help. Salmon Salad in Creamy Kale Avocado Pesto

Call it a salad.  Call it a dip.  Call it a filling.  Call it a topping….  Call it what you will, but I call it AWESOME.

Good news for those with special diets!  This is grain free, gluten free, soy free, dairy free, sugar free, egg free, nut free…  But did I mention that it tastes AWESOME?!?  (After dinner, I was literally using my finger to scoop the scraps from the sides of the food processor.  It’s THAT good.)
