Carrot Cake Sandwich Cookies

It’s the end of the semester and a beautiful time for… procrastination.  I spent Friday cleaning house, Saturday gardening, and Sunday afternoon whipping up these little guys.  It was a treat for the boys that I could feed to them without feeling guilty.  And they loved it!  (It was also a great excuse to continue putting off grading papers, projects, and tests… oops.  Eventually, it all got graded.)  My version is not dairy-free, but I think it could easily be adjusted to make it so… hmmm… and now I’m reading that last sentence in the voice of Patrick Stewart.

Luigi Stuffed Mushrooms

ImageMy 4 year old has an addiction – Mario Cart.  We have to closely monitor/ration the minutes of the day that he is allowed to play, and it works as a wonderful motivational tool.  For example: “If you make your bed, put your dirty clothes in the hamper, set the table, etc., you may play Mario Cart for 20 minutes.”  What I didn’t expect was the way Mario Cart would encourage my kid to eat his mushrooms.  He loves mushrooms.  When I cut them up for a recipe, he is always begging to snack on a few mushroom slices from the cutting board.  I credit him for naming this recipe – the first time I placed them on the table in front of him, he joyfully exclaimed, “You should call them LUIGI mushrooms!” Continue reading

Iced Rooibos Tea with Chia Seeds

This is a very simple recipe, but it takes a little time to prepare, so plan ahead.  If you’re not already familiar with chia seeds, get to know them a little.  They are fabulous!  Very high in fiber and antioxidants, and they help to leave you “feeling full” if you have trouble with hunger cravings.  When you let them soak in liquid, they get a little jelly-like “bubble” around them, which is why I like using them in tea.  It’s reminiscent of the bubble tea I used to drink, but without all the starchiness. I tried to find a creative title for this recipe.  I even asked my husband (the “king of puns”) for help. Easy Spicy Grilled Steak

Do you ever come home from work and think, “How in the world am I going to make an entire dinner?  I’m hungry NOW!”  With a little planning and a few easy ingredients, you can have something ready in just a few minutes. I’ve been buying meat in bulk lately and freezing the extra, because the stores around here like to “bundle” for cheaper prices.   I knew yesterday that I would want tonight to be a steak night, so I threw a huge sirloin in the meat drawer of the fridge before going to bed last night. Mini Pumpkins with Maple “Cheesecake” Filling

I’ve been in a bit of a rut lately. It’s not an unhappy rut… just one lacking in blog-worthy creativity. I am finishing week 4 of P90X this weekend, and it has been a BLAST this time around, because I have anywhere from 3 to 7 college students joining me every day to work out with me. Granted, they are all more than a dozen years younger than I am, and can frequently kick my bootie, but it makes the whole experience SO much more fun!
