This recipe could not be easier. All you need is coconut oil, chocolate chips, and the nuts of your choice. Heat 1-2 cups dark chocolate chips and 1 tablespoon coconut oil in a microwave safe bowl at 30 second intervals, stirring between, until melted. Mix in 3-4 cups of nuts of your choice. (I used blanched, sliced almonds and chopped walnuts.) Spoon small mounds of the mixture onto parchment paper or wax paper, allow to cool/set, and enjoy!
Variations: add shredded coconut, a sprinkle of sea salt, a dash of vanilla extract or cinnamon… get creative!
ETA: One of my students mentioned adding raisins or coffee beans. I’ll have to try this next time!
